Boomerang Semi-Washed coffee is sourced from the same group of growers as our Bundja Coffee; however it is processed using our semi-washed process. All of the batches selected for the Boomerang coffee were sourced in mid season, when the fruit is at its prime. MTC takes Brix® analysis of the cherries during processing and for the Boomerang coffee our aim is to create a balance between sweetness and acidity. The semi-washed process ensures the coffee exhibits a clean, crisp pallet leaving a sparkle on the front of pallet with a lingering sweetness. The length of ripening time in the growing region and temperature differentials from daytime to night time ensure a subtle but creamy body, which balances the flavour. The coffee is designed for use as a filter coffee, with medium acidity in a sweet lime and fruit style acid. It has an even, fruity sweetness and body and a tempting chocolate aroma.
