Washed coffee. That is: picked when prime then straightaway depulped using water in mechanical processes and dried : suitable as plunger, espresso and filter. Washed coffee has a cleaner profile with nuanced flavour. We roast this coffee to a medium/city level. This coffee is most suitable for espresso, plunger and filter.
Naturals and winey. That is: "Naturals" coffee is coffee bean that has been allowed to stay on the tree so that the pulp (or juicy fruit layer) dries and slightly ferments around the seed. It is mechanically dried. The result is a fruitier and more intense cup with a good body. There is some addition of winey process in our bundja, which is prime cherry that is sun dried quickly and without pulping. We roast this to a City+ level, which is our darkest roast level as it is primarily used for espresso, though suits plunger as well.

I am a huge coffee fan , i try to buy single origin from all over the world. And i think i have found the best in my own backyard!! I love the intense flavours from this coffee.

I'm a simple guy, i do a period of testing, lock in the product with right combination of attributes then don't generally switch for a while; coffee is no different.
Drinking jindebah.com for 3yrs, a friend (MK) put me onto MountainTop. I order 250g of 478 & 35, ground them up and each smelled so rich, so hearty, it was like ground *meat* - honestly! Iv since been making the best coffee's iv ever made (close to "ever drank" too), using MT beans. Australian grown, pesticide free!?!
I imagine it will be a long time before I make another switch :D
* I use a hand grinder, Aeropress, 30grams / cup with milk
