Product Description

MICROLOT Nov/Dec 2019

Washed coffee. Selected from our first 3 harvest days, this Bin lot comes from a group of pure Kenyan (K7) arabica situated on red volcanic soil. They were pruned using a new method last year, allowing in more light and for bigger berry to form. And we are very happy with the result. It ripened earlier than previous years and more evenly. It ticks all our boxes; a well rounded and sweet coffee with pleasant citric acidity and fascinating complexity. Nuances of watermelon, apple and sultanas. It has a mysterious quality to the thick syrup in the final sips of a short black espresso that lingers and develops on the pallet. Usable across all applications that a medium plus roast is suited too: espresso, plunger, aeropress

BIN 478

Washed coffee. That is: picked when prime then straightaway depulped using water in mechanical processes and dried : suitable as plunger, espresso and filter. Washed coffee has a cleaner profile with nuanced flavour. We roast this coffee to a medium/city level. This coffee is most suitable for espresso, plunger and filter.

This deep impact roasted bean was derived through a fermentation process. It begin with collecting the fresh red fruit after pulping coffee fruit at the wetmill during harvest. The skin brew was fermented and made alcoholic. New fruit was picked and added whole to the fermenation vat. It was left there for some weeks, removed, dried and processed before being roasted. The origins of this blend becames clear when the aroma from grinding begins. It is a powerful experience, hard to describe. Spice, ferment, chocolate. The most surprising and rewarding experience with this coffee is the way it lingers and tinglkes in the pallet.

Naturals and winey. That is: "Naturals" coffee is coffee bean that has been allowed to stay on the tree so that the pulp (or juicy fruit layer) dries and slightly ferments around the seed. It is mechanically dried. The result is a fruitier and more intense cup with a good body. There is sometimes an addition of winey process in our bundja, which is prime cherry that is sun dried quickly without pulping.
